Dinner is Served!


Tonight's dinner: homemade cabbage soup with cauliflower, diced tomatoes, cilantro, cabbage, and turkey meatballs. No recipe...just a little experimentation. It's amazing what you can throw together when you have a fridge full of veggies! :)

I chopped up a head of cabbage and a head of cauliflower...then added 2 cans of diced tomatoes...for more flavor, try different kinds of tomatoes...like the Italian ones. I also added some turkey meatballs (bagged and frozen) and some roasted turkey roast that I had leftover from a few days ago. Chop up some cilantro, fresh...to taste. Also add maybe a little salt and pepper. Add 2 or 3 cups of water and put it in a pressure cooker for 10 minutes. Voila'...dinner is served!

If you don't have a pressure cooker and you don't like to cook...like I really don't...lol...BUY one. My great grandmother used to have the old fashioned kind. I purchased a little more expensive and electronic version of hers. It cuts cooking time by about 70 percent. I also cooked steak in it once before and it was tender in 30 minutes.
